Homemade Italian Pasta


We are definitely foodies and we love to cook at home, often making delicious, and sometimes extravagant meals together. We absolutely love our red KitchenAid mixer, and can’t imagine cooking without it. We use our mixer mostly to make breads, desserts, meat loaf, and sauces.

For Christmas this past year, we received a highly anticipated attachment for our KitchenAid. We’ve had our eye on a pasta maker attachment since we’ve returned home from a fabulous trip through Tuscany, Italy. This particular pasta attachment is made in Italy and offers 6 different pasta noodle sizes, including the bucatini noodle for the famous Roman cuisine, cacio e pepe.

So, this past weekend, we finally tried our hand at making homemade pasta and it turned out delicious!

We decided to go simple for our first attempt, and used a basic semolina flour recipe for Fusilli noodles.

Homemade Fusilli Noodle Recipe:

½ teaspoon salt

1 ½ cups organic semolina flour

2 eggs

2 tablespoons water

2 tablespoons olive oil

We try to use organic, free range, all natural, etc. ingredients as much as possible, typically from Whole Foods, Sprouts, or our local farmer’s market here in Santa Fe.

We mixed the eggs, water and olive oil using a whisk and then poured that mixture into the flour and salt mixture in the KitchenAid, while it was mixing on low. We let it mix for about 10 minutes, kneading the dough, and then, let the dough sit wrapped up in a towel for about 20 minutes. After, we fed the pasta attachment little walnut-sized dough balls! The pasta maker then slowly pushed out our fancy Fusilli noodles.

To finish off the pasta, we mixed the noodles with sun dried tomatoes, artichoke hearts, goat cheese and sweet Italian chicken sausage for a delicious dinner. Check out our video below:

It was a nice way to wind down after a long day of work, spend some quality time together, and create a delicious meal.
